Freezer Cooking: Caramelized Onions
So the other day I shared my recipe for French Onion Soup. But what I didn't mention was that I actually caramelized twice the amount of onions that I listed in the ingredient list.
Y'all already know my love of cooking once and freezing for later use. And I LOVE caramelized onions. They are rich and sweet and savory and add such a great depth of flavor to so many meals. But they take a while to cook.
So I decided to double what I needed for the soup and freeze half of the onions in small baggies for later use. They are great added to any meat or veggie dish. Add to sandwiches or tacos too.
I'm a big fan of freezing things in zip top baggies. They store flat and take up almost no space at all.
Remember...cook smarter not harder! If you are cooking up onions (or chicken or rice), make double and freeze portions for later use. You'll thank me on a busy night when you crave home cooking!

I love carmelized onions, but I've never thought about freezing them. Good to know!
