Summer Salad





So I guess there are a few good things about being single. I can gleefully call this my dinner and not have to worry about adding meat or bread. This is one of my favorite summer suppers. Chop up several small or one large tomato, a bunch of strawberries that need to be eaten, some chunks of fresh mozzarella, some scallions or red onion if you have them on hand, some torn up basil leaves and Brianna's strawberry vinaigrette (THE BEST DRESSING! I pour off most of the oil before I use it to lower the fat but it's great either way.). Mix and enjoy. So fresh and filling. And will make you feel considerably less guilty should you decide to go get ice cream afterwards. Feel free to substitute whatever is in your fridge and needing to be used up like raspberries or blueberries or even squash.

Oh this looks amazing. This definitely looks like one to add to the ol' recipe box.
Have you ever tried watermelon salad? Just in case you're interested.
1 small seedless watermelon (cut into cubes)
1 sml. container Feta Cheese (4 oz.)
1 sml. red onion (thinly sliced)
1/4 C. Red Wine Vinegar
1/2 C. EVOO
2 T. Fresh Mint Leaves, chopped
Salt&Pepper to taste

Place cut up watermelon in a bowl with onion and feta cheese.
Mix vinegar, salt and pepper and mint leaves, slowly add EVOO while wisking. Pour over salad and enjoy!

That sounds so good! So fresh and Summery! I have been doing Caprese salads with cucumbers all week for lunch and adding strawberries and that dressing sounds yummy!

Haven't had this exact salad but I've had one similar. Love it! Instead of mozzarella, I used feta...yum feta!! That dressing is so delish too! Thanks for sharing and happy Monday!
