Peanut Butter Oatmeal Raisin Cookies


I know that sounds like too many things in one cookie.  I resisted tossing in a few chocolate chips if it makes you feel any better.  Though I can't say it wouldn't be tasty to have a few in the batter.

These are definitely a less bad cookie.  Not exactly healthy.  But if you are looking for healthy, I don't suggest seeking it out in a cookie.  But these have less bad than say my favorite chocolate chip cookie recipe.  So that's something, right?

Oh, and they are really tasty.  Perfect for a date night watching an outdoor movie you don't particularly want to see but you agree to go anyway because you're nice but you make sure to bring a snack as a distraction.  Or you know, whenever you want a cookie.

Of course I made these gluten free by using my favorite GF flour but you can just use whatever you like best.




Peanut Butter Oatmeal Raisin Cookies

Ingredients:

* 2 very ripe bananas
* 1/3 cup peanut butter
* 2 tbls milk of choice
* 1 tsp vanilla extract
* 1/4 cup packed brown sugar
* dash of cinnamon

* 1 large egg
* 2 tbls butter, melted
* 3 cups quick cook oats
* 1/3 cup flour
* 1/2 cup raisins

Directions:

* Pre-heat oven to 350.
* In a bowl, mash bananas with fork until smooth.  Whisk in peanut butter, milk, vanilla extract, brown sugar, cinnamon, egg and butter.
* Gently mix in flour and oats.  Add raisins (and chocolate chips if adding those too) and mix.
* Scoop dough balls onto greased cookie sheet.  Flatten slightly with rubber spatula.
* Bake for 12-14 minutes.
