
In the mean time, I came up with a very random but quite delicious soup this week. It makes a TON. I am an eat twice and freeze the rest kind of girl. So I will be eating this soup for lunches for quite a while. No complaints here. It's very filling. And totally healthy...until I go and ruin that by adding cheese.
Ingredients:
* ground meat (I always use turkey)
* 1 onion, diced
* 1-2 cloves garlic, minced
* 2-3 cans kidney beans
* 1 can of corn
* 1 can of tomato sauce
* 2 cans diced tomatoes
* 1 package of taco seasoning
* stock or water
* shredded cheese
* corn or tortilla chips
* salsa
* sour cream
Directions:
* Brown meat in a little EVOO in large pot. This makes a lot so use your big pot. Add taco seasoning packet. Add in onion and cook until translucent. Add minced garlic last to be sure it doesn't burn.
* While cooking meat and onions, open all the cans. Feel free to add more or less or use whatever you have on hand already.
* Dump them all in the pot. Don't even drain the beans. I mean, you certainly can if you want to. But the beans have been sitting it there for who knows how long. Why throw away free flavored and thick liquid? Right. So it all goes in the pot.
* Stir.
* If you need more liquid, add either stock or water. My pot was rather full at this point so I ended up adding a big can full of water but not a ton.
* Go walk the dog. Or let it sit there cooking away for a good half hour.
* Serve with chips, cheese, sour cream and salsa (I forgot about the salsa actually but I am sure it would be yummy.).
* Enjoy!
** If you brown the meat and onions off, you can certainly dump this in the crockpot and let it cook on low all day too.

This sounds like a perfect meal for winter. I like a recipe that makes a large amount so it will last for several meals.
If you want a point and shoot type camera, we like the Canon Powershot. Ours is an SD500 and is old but we still love it. My fancy camera is a Canon Rebel EOS and I like that, too, but I'm still learning to use it.
My mother in law always makes this soup and KB loves it!
Too funny ~ I just posted a Mexican soup recipe this morning. Perfect for a snowy Saturday! We have the same mindset ~ have some, freeze some. I freeze mine in individual cups so that I can grab one in the morning for my lunch at school. It's completely thawed by the time lunch rolls around.

My family loves taco soup. I was one of about 8 other cooks for a church girls camp for about 200 girls and we made taco soup one night and it was the girls favorite. It's perfect for a cold night too.

I looooove taco soup. I especially love any kind of chicken-tex-mex-taco soup concoction with a dollop of sour cream and some cilantro on top. SO good!
Ruth- add as much or as little broth/water as you need. I added about a can or two worth of water. You might not need any. Or you might want a thinner soup and add a lot more. Totally up to your tastes.
I love a good taco soup in winter, and I love how well it freezes. Hubby doesn't eat soups very well so freezing leftovers is important.

Thanks for letting me know you also follow crock pot sites! I have a taco soup posting in a week or so I tried that was good, but I've been having bad luck! I actually LIKE the crock pot, but I've been running into some real duds lately. I love the tamales from the site you mentioned, but I tried out the stir fried rice and it was yuck, and a few other things. I'll be watching to see what you find and like, I haven't tired your other recipes yet, just a taco soup that was actually good. :O)
