I love crockpots! |
Guess how I cooked a chicken this week? Did you guess a crockpot? Ding, ding, ding! You're right! Y'all know how much I love that magic cooking machine. It never disappoints.
Now you might be skeptical on this creation but please try it. It was hands down the BEST CHICKEN EVER! And you can find the cherries in the low sugar and/or organic varieties if you so desire. Try this recipe. You'll thank me later!
Ingredients:
* 1 whole roasting chicken that will fit into your crockpot
* 2 med sweet or regular potatoes, chopped into 1 in cubes
* 1 med onion, sliced thick
* several handfuls of baby carrots
* 1 can of cherry pie filling
* lots of salt and pepper to taste
Method:
Place 1/2 of the veggies in bottom of pot. Add S & P. Place chicken on top of veggies. Generously add S & P. Add remaining veggies all around chicken. Add can of cherry pie filling on top of it all. Place lid on, cook on low all day or high half the day.
I know, it sounds crazy and super sweet. But I promise, it's not. It's juicy and tasty and finger-lickin' good! Add a salad and you're good to go.
I also made a big batch of apple sauce this week. Mmmmm- that is one of the greatest things about this time of year. Good golly is it so much better than the stuff in the jar! I've been snacking on it all week for desert- delish!

I <3 homemade apple sauce as well, well really anything homemade. Made with love is always better then made with preservatives. Have you ever tried making pear sauce? I've found that kids can't taste the difference but adults can and love it. It is seriously the best thing ever and super simple. It can be made in a dorm room!
All you do is peal a pear(s) (use what you would sue to peal a potato unless the pear is super ripe the use a dinner knife.)
Chop the pear, mash up, add cinnamon and a healthy amount of sugar (more then if you were making apple sauce. Stir and serve. Sorry for the novella of a comment but I had to share :)
